Happy Tuesday, friends! This week we are having super simple, easy, and quick dinners.
Here's what's on our menu for this week. Super quick, super easy, and somewhat healthy-ish. For the most part anyway!
Monday- Salmon and veggies. I got this salmon already seasoned at Aldi. I'm just popping this in the air fryer and serving it with green beans and corn on the cob. Easy peasy!
Wednesday- Chicken and veggies. Just switching out the protein! I like to buy a rotisserie chicken for extra easiness. We're having this with mashed potatoes and corn on the cob.
Thursday- Chicken parm. Except it's not really chicken parm at all 😂. I got these breaded filets from Aldi, I'm going to add shredded mozzarella on top along with Alfredo sauce instead of marinara, and serve over fettuccine. Another quick and easy meal!!
Tonight we'll either have leftovers or whatever we can find. Friday, Caleb has a work thing, so I'll probably do leftovers.
