Simple Weeknight Meals

 Happy Thursday!! I don't know about you, but we LOVE a super simple meal during the week. So, here are some of our favorite things that come together very easily! Red beans and rice. Ok, I actually made fun of Caleb a little bit when he said he wanted to make Zatarain's red beans and rice. He said it was the best. I wanted to make homemade. Well, it's now my favorite way to make this meal. It's SO easy, pretty quick, and it's delish. We always add in deer sausage just because we have a ton in the freezer. And then we have it with.... Corn bread. So, nothing fancy, but it's in our weekly rotation! Goat cheese and penne. Still one of our very favorite things to have for dinner. It's so good and so easy! Whenever we don't know what to have for dinner, we pretty much always end up having this. Tacos. Ground beef. Taco seasoning. Tortillas. Cheese. Sour cream. Easiest thing ever. Authentic? Creamy Sausage Pasta

 I accidentally made a really delicious pasta last week, and I think it's a new favorite around here! Ok, I don't quite know what to call it so I am just going with Creamy Sausage Pasta. I used what we had in the pantry/fridge, and I kind of eyeballed everything, so I hope these measurements are right 😂. Here's the recipe! Ingredients:  1 pound of your favorite link sausage (I used a cheesy deer sausage), sliced into rounds Sliced mushrooms 1/2 pound penne pasta  1.5 cups chicken broth 1/2 cup heavy cream 1/2 cup parmesan cheese 1-2 cups spinach Garlic powder, salt, pepper all to taste Directions: 1. Sautee mushrooms in EVOO 2. Add in sausage and let it brown up 3. Once sausage is browned, add in uncooked pasta, broth, heavy cream, and seasonings. Let that come to a boil and then cover and let simmer until pasta is done and most of the liquid is absorbed (about 15 minutes). 4. When pasta is cooked, add in your spinach and let it wilt down. 5. Lasagna Soup

 One of my very favorite things to make is lasagna soup! A sweet reader asked me to share the recipe, so if that was you- here ya go! I got this recipe from @maggieeatsss on Tik Tok- not sure where it is originally from though.  Soup Ingredients:  1 lb ground meat of your choice (I have used both ground beef and ground sausage- you can mix or use one or the other. Ground turkey would be a good option too!) 1 yellow onion Minced garlic (however much your heart desires!) Either 1/2 or whole box of lasagna sheets, broken into bite sized pieces 1 24 oz jar marinara sauce 1 cup heavy cream 2-4 cups beef broth (depending on how much lasagna you use!) Handful of fresh basil Ricotta Mixture:  15 oz ricotta cheese 1 cup shredded mozzarella 1 cup shredded parmesan  About 3/4 cup fresh parsley Directions:  1. Sauté onions and brown ground meat. Taylor Swift's Chai Sugar Cookies

 Need something yummy to make for the holidays?? These cookies are delicious and taste like FALL! Taylor shared these several years ago, and I finally got around to making them. Here is her recipe.... And this version includes the icing recipe.... I'm not sure if it's her icing recipe, or if someone else made it up. But it's delish! And for the final product! YUM. Easy Red Beans and Rice

 Happy Tuesday! I feel like I've shared about this recipe before, but it doesn't have it's own blog post. So, here ya go! My mom started making red beans and rice like this a few years ago, and now this is how I do it. It's super easy and super quick! Ingredients: 1 can of Blue Runner red beans (I actually like the white beans better, but it's rare that I find them!) 1 package of your favorite sausage, cut into rounds (I've been using a jalapeño cheddar deer sausage lately) White rice for serving Directions: 1. Heat your sausage in a skillet until browned.  2. Mix in your can of Blue Runner beans. Sometimes I add a little water but not always. Let it simmer on medium heat for about five minutes. I also add in a little salt, pepper, and garlic powder. 3. Serve over your cooked rice. See how easy?? And dang it's so good!!

Egg Roll in a Bowl

  Happy Tuesday!! It's been a while since I've shared a recipe, and this one has been on repeat for me week after week. So, I decided it needed a permanent place on my blog. I've followed other recipes, I've tweaked things here and here, and I have finally found my perfect recipe for.... EGG ROLL IN A BOWL!!  It may not look the most appetizing, but it's really so good! Here's my super simple recipe. Ingredients: 1 lb ground turkey 1 tsp grated fresh ginger 2 cups of tri-color coleslaw mix 2 tbsp soy sauce Salt and pepper to taste Directions: 1. Brown your turkey, then add in ginger, salt and pepper, and soy sauce. 2. Toss in coleslaw mix and let it wilt a bit before serving. 3. I eat mine with either a little bit of spicy mayo (mayo+sriracha), or with a sweet and sour chili sauce- sometimes both! Simple Weeknight Meals

 Happy Tuesday, friends! This week we are having super simple, easy, and quick dinners. Here's what's on our menu for this week. Super quick, super easy, and somewhat healthy-ish. For the most part anyway!  Monday- Salmon and veggies. I got this salmon already seasoned at Aldi. I'm just popping this in the air fryer and serving it with green beans and corn on the cob. Easy peasy!  Wednesday- Chicken and veggies. Just switching out the protein! I like to buy a rotisserie chicken for extra easiness. We're having this with mashed potatoes and corn on the cob.  Thursday- Chicken parm. Except it's not really chicken parm at all 😂. I got these breaded filets from Aldi, I'm going to add shredded mozzarella on top along with Alfredo sauce instead of marinara, and serve over fettuccine. Another quick and easy meal!! Tonight we'll either have leftovers or whatever we can find. Friday, Caleb has a work thing, so I'll probably do leftovers.  What's on your menu...

Winter Wassail Margarita

Happy Tuesday! I haven't posted a recipe in quite some time, so here's a festive one for ya! Super easy, super festive, and super delish! If you like a classic margarita, you may like this Christmasy spin!  Ingredients:  3 oz Winter Wassail Punch (I used the one from Trader Joe's) 1 oz Tequila 0.5 oz Triple Sec Lemon Wedge to garnish (This makes one margarita.) Directions:  Add all of your ingredients to a shaker with ice, shake, and pour into a cocktail glass. I squeezed in a little of my lemon wedge, too! Enjoy!

Spicy Pumpkin Alfredo

Happy Tuesday, friends!! I haven't shared a recipe in quite a while- I threw this together last week, and it was DELISH, so here is a super easy FALL recipe!!  Ingredients:  1 pack of Cajun sausage cut into rounds (really any sausage will work, but we wanted extra spicy!) 1 lb pasta (I used a pumpkin shaped pasta!) 1 jar of alfredo sauce About 1 cup Trader Joe's Autumnal Harvest pasta sauce About 2 tbsp chipotles in adobo sauce (according to how spicy you want) Directions: 1. Cook your pasta. While your pasta is cooking, brown your sausage in EVOO. 2. When your sausage is browned, add in your jar of alfredo sauce.  3. In a separate pot, simmer your TJ's sauce and chipotles together. (I did mine separately, because we didn't all want the pumpkin and chipotles.) 4. Once your pasta is cooked, add it into the pot with your sausage and alfredo. Ladle into bowls and add your pumpkin and chipotle mixture on top.  Enjoy!! Have a GREAT day!!

Simple Charcuterie Board

 Happy Wednesday! My mom and sister were just in town, and one night we had a big charcuterie board for dinner. Here's how I put it all together.... Presentation is key!  I love to mix and match different boards, bowls, and platters to assemble everything. I usually serve the pepper jelly straight from the jar it comes in- most of the time it's in a pretty jar! I got my cheese knives from Crate and Barrel. I LOVE making charcuterie boards! It's almost therapeutic, and it helps that it's delicious!  I grabbed everything I needed from Aldi, plus a few things from Kroger. I also used some things I had from Trader Joe's.  I always do a few cheeses, meats, a pepper jelly, a dip or two, something pickled, and crackers.  Everything was DELICIOUS! Plus, we had plenty leftover for us to snack on for a light lunch or little appetizer!  And what's charcuterie without something fun to drink.... I Made Jam!

 Happy Thursday, y'all! Let's make some EASY jam!! I have seen Shay make jam for several years now, and I finally decided to give it a go! I made the "freezer jam" version.  I used the directions that come with the liquid certo box, as well as the ingredient list it offers.  I made strawberry!  I filled up 7 8oz mason jars. They rested on my counter for about 24 hours. I labeled them with type and date. They will last in the freezer for up to one year and up to 3 weeks in the refrigerator.  Here they are after freezing for a day.  This is after being in the fridge for a few hours. OH MY GOODNESS. SO SO good!! You know the strawberry popsicles they have at the snack carts in Disney World?? This jam tastes just like those!  I made Ina Garten's Buttermilk Cheddar Biscuits , and the jam was really good on those! Parmesan Garlic Chicken Pasta

  Happy Tuesday!! Yesterday, I shared my meal plan for the week, and I had pulled pork sandwiches on the menu for last night, but my pack of chicken leaked out on everything- gross!! So, I went ahead and made this Garlic Parm Chicken Pasta I saw on Tik Tok. I'm not sure who the original creator is, but tons of people have made it now!  Ingredients:  1 lb boneless chicken breasts 1 bottle of Buffalo Wild Wings Parmesan Garlic sauce Heavy whipping cream 8 oz block of cream cheese Parmesan cheese Pasta of choice (I used 1/2 of a box of Rotini, but a full box will work too) Directions:  1. In your slow cooker, add in your chicken breasts, followed by the parmesan garlic sauce. 2. Fill the empty parmesan garlic bottle all the way with heavy whipping cream, shake and pour over chicken. Fill the bottle again (I only filled half way) with more heavy whipping cream and pour into your slow cooker.  3. Add in your cream cheese and parmesan cheese. 4. The Tik Tok video I r...

Mom's Slow Cooker Roast

  Happy Tuesday! I'm back with another suuuuuper simple recipe for a busy weeknight!  Ingredients:  1 chuck roast 1 can of cream of mushroom soup 1 can of cream of chicken soup Baby carrots Potatoes (I used a bag of small gold potatoes and cut into bit size pieces) Directions:  Place all ingredients in your slow cooker, and let it cook on low for 8-10 hours. We always like to eat our roast with rolls!  Enjoy!

Tortellini Soup

  New month, new recipe! Today I'm sharing a recipe that I found on Pinterest. It was so good! Ingredients:  1 lb Italian sausage 2 cans Rotel 4 cups chicken broth 8oz block of cream cheese 20oz cheese filled tortellini  Some recipes call for spinach, but I didn't add any.  Directions:  1. In a large pot, brown your sausage. 2. Add in your Rotel, broth, and cream cheese.  3. Once your cream cheese is melted, add in your tortellini. Let everything simmer until your tortellini is cooked. Mom's Homemade Hamburger Helper

  I'm back with another suuuuper easy recipe!! My mom has a wheat allergy, so she came up with this little recipe in place of Hamburger Helper. It's the easiest recipe ever and soooo good- you can't mess this one up! Ingredients:  1 lb ground beef 1 can cream of mushroom soup About 1/2 cup sour cream  1 lb rotini pasta Directions: 1. Bring a large pot of water to a boil. Cook your pasta according to it's package.  2. In a skillet, brown your ground beef.  3. Once your ground beef is thoroughly cooked, add in your can of cream of mushroom and sour cream. Add salt and pepper to taste, then add in your cooked pasta.  Sooooo easy! And so good! It's one of my favorite meals that's so simple but so good.
