Lasagna Soup

 One of my very favorite things to make is lasagna soup! A sweet reader asked me to share the recipe, so if that was you- here ya go!

I got this recipe from @maggieeatsss on Tik Tok- not sure where it is originally from though. 

Soup Ingredients: 

1 lb ground meat of your choice (I have used both ground beef and ground sausage- you can mix or use one or the other. Ground turkey would be a good option too!)

1 yellow onion

Minced garlic (however much your heart desires!)

Either 1/2 or whole box of lasagna sheets, broken into bite sized pieces

1 24 oz jar marinara sauce

1 cup heavy cream

2-4 cups beef broth (depending on how much lasagna you use!)

Handful of fresh basil


Ricotta Mixture: 

15 oz ricotta cheese

1 cup shredded mozzarella

1 cup shredded parmesan 

About 3/4 cup fresh parsley


Directions: 

1. Sautรฉ onions and brown ground meat. Once meat is brown, add in garlic.

2. Once garlic is fragrant, add marinara sauce, beef broth, heavy cream, basil, and broken lasagna pieces. Let everything simmer until lasagna is done.

3. While soup is simmering, mix all ricotta mixture ingredients together in a separate bowl.

4. Once lasagna is done, ladle into bowls and serve with a dollop of the ricotta mixture!

Enjoy!

This makes great leftovers, but the lasagna will soak up a lot of the broth. So, you may want to add more beef broth when you reheat!

 Happy THURSDAY. My days are getting so mixed up with a Friday holiday haha! Posting Friday Faves a day early since tomorrow is Good Friday. Whoop whoop! We're getting a 7Brew!!  Happy Friday, friends!! And Merry Christmas Eve Eve Eve Eve Eve- that's a thing, right??๐Ÿ˜‚ I'm linking up with Erika and Andrea today to share some faves from the week, and then I will be off for the holidays!
