Happy Tuesday!! It's been a while since I've shared a recipe, and this one has been on repeat for me week after week. So, I decided it needed a permanent place on my blog. I've followed other recipes, I've tweaked things here and here, and I have finally found my perfect recipe for....
EGG ROLL IN A BOWL!!
It may not look the most appetizing, but it's really so good! Here's my super simple recipe.
Ingredients:
1 lb ground turkey
1 tsp grated fresh ginger
2 cups of tri-color coleslaw mix
2 tbsp soy sauce
Salt and pepper to taste
Directions:
1. Brown your turkey, then add in ginger, salt and pepper, and soy sauce. 2. Toss in coleslaw mix and let it wilt a bit before serving. 3. I eat mine with either a little bit of spicy mayo (mayo+sriracha), or with a sweet and sour chili sauce- sometimes both!
This recipe is SO simple, quick, one pot, low carb.......it's the best for a busy night or a night when you don't feel like cooking. If I want to make this a regular macro meal (meaning more carbs!!), I mix in cooked quinoa!
