Simple Weeknight Meals

 Happy Thursday!! I don't know about you, but we LOVE a super simple meal during the week.

So, here are some of our favorite things that come together very easily!

Red beans and rice.

Ok, I actually made fun of Caleb a little bit when he said he wanted to make Zatarain's red beans and rice. He said it was the best. I wanted to make homemade. Well, it's now my favorite way to make this meal. It's SO easy, pretty quick, and it's delish. We always add in deer sausage just because we have a ton in the freezer. And then we have it with....

Corn bread. So, nothing fancy, but it's in our weekly rotation!

Goat cheese and penne.

Still one of our very favorite things to have for dinner. It's so good and so easy! Whenever we don't know what to have for dinner, we pretty much always end up having this.

Tacos.

Ground beef. Taco seasoning. Tortillas. Cheese. Sour cream. Easiest thing ever. Authentic? Definitely not. But always hits the spot!

Babs' chicken gyros.

Ok, this is one we haven't had in forever! I think they'll go on next weeks meal plan! These gyros are easy and delish! I'm the worst when it comes to cooking chicken (I'm never convinced it's fully cooked😂), but I have no issue with this recipe!

Frozen pizza.

Simple. Easy. One of our faves! Easy to grab at the store, easy to throw in the oven. Our favorites are the Aldi ones in the refrigerator section, Screamin Sicilian, or Heart and Fire. I always drizzle hot honey on mine and dip in buffalo ranch!

Friday Favorites {10.18.24}

Ummm YAY!! I'm most excited about Confessions of a Christmas Letter (Angela from The Office is starring in that one!) and Holiday Touchdown: A Chiefs Love Story! For some foodie faves... This right here. It made my week. I'm obsessed with the tuna from Beagle Bagel. It's amazing. I can never say it enough! I made egg drop soup for the lunch the other day, and it was really good! It's always been my favorite soup from Chinese buffets. I didn't feel great and wanted a soup...luckily I had all the ingredients. I used this recipe here. The weather this week was absolute perfection.  I mean, it was really, really cool. And it was fabulous. So, that means.... I broke out a sweater and my Sorel booties that I love so much! Let's Look: September 2024

 Hey, friends! I hope you are having a great week so far! Today is the September edition of Let's Look. But before I get into that, I want to talk a bit about today, September 11. Today is the 23rd anniversary of the attacks on 9/11. I was only one year old when this happened, so I obviously do not remember where I was or what I was doing or anything from this day. All I know is because of the people who continue to honor to victims and the heroes of this day. I have had the honor of visiting the memorial and museum in NYC twice now, and both times I have been were such an incredible experience. Visiting there is heavy. It is sad. It's informative. It's also beautiful to see how our country came together in such an awful time. I love this picture that I took on my last visit. The leaves in the picture are from a tree that survived everything from that day 23 years ago. It was transported to a greenhouse for a while, but it was eventually moved back, and I loved that I could...
