Today I have a fun and easy dinner idea! We got our panini press as a wedding gift, and I think we agree that it's probably the best thing we registered for. We love doing just ham and cheese sandwiches pressed, but I wanted to try out something a little different. I'm calling them Charcuterie Paninis because everything I used for the sandwiches, I always have on my charcuterie boards! Here's how we made them...
Antipasto Italiano (we got the pack with prosciutto, coppa, & salame)
Boursin Garlic & Fine Herbs cheese
Bread of your choice (We don't get too fancy with this! We use white sandwich bread, but anything would work.)
I wish I had also gotten a pepper jelly to put on them. I'll try that next time. I also ate some of the Boursin cheese with pita crackers on the side.
Once you assemble your sandwiches, press them for about 2-3 minutes. If you don't have a panini press, you could do this in a skillet. This isn't fancy, but we both loved it, and dinner was ready in just a few minutes.

Pepper jelly

The possibilities are endless with this one!
