Charcuterie Paninis

Today I have a fun and easy dinner idea! We got our panini press as a wedding gift, and I think we agree that it's probably the best thing we registered for. We love doing just ham and cheese sandwiches pressed, but I wanted to try out something a little different. I'm calling them Charcuterie Paninis because everything I used for the sandwiches, I always have on my charcuterie boards! Here's how we made them...

Antipasto Italiano (we got the pack with prosciutto, coppa, & salame)

Boursin Garlic & Fine Herbs cheese

Bread of your choice (We don't get too fancy with this! We use white sandwich bread, but anything would work.)

I wish I had also gotten a pepper jelly to put on them. I'll try that next time. I also ate some of the Boursin cheese with pita crackers on the side. 

Once you assemble your sandwiches, press them for about 2-3 minutes. If you don't have a panini press, you could do this in a skillet. This isn't fancy, but we both loved it, and dinner was ready in just a few minutes.

Pepperoni

Gouda

Brie

Goat cheese

Sun dried tomatoes

Pickles

Blackberries

Green apples

Pepper jelly

Honey

The possibilities are endless with this one!

Friday Favorites {4.2.26}

 Happy THURSDAY. My days are getting so mixed up with a Friday holiday haha! Posting Friday Faves a day early since tomorrow is Good Friday. Whoop whoop! We're getting a 7Brew!! Friday Favorites {12.19.25}

 And just like that.....it's CHRISTMAS BREAK! And my last post of 2025! But before all of that, let's get into some faves from my week! Linking up with Erika and Andrea. Some Christmas funnies for ya.... 😂😂😂 "Underground Spirit Week" We dress up or do something silly and the students have no idea, so it's constant confusion and laughter! So fun! Monday- PJ day.
